Meet Raven, our new house espresso.

For years, Lola was the espresso behind our bar. But as the coffee market changed, maintaining its original five-coffee blend became increasingly difficult. What we thought would be a simple update turned into months of roasting, tasting, adjusting, and starting over.

Rather than trying to recreate Lola, we set out to build an espresso for where Catahoula is today—sweet, balanced, dependable, and versatile enough to shine as a straight shot or cut beautifully through milk.

After plenty of trial and error, we landed on Raven.

Why Raven?

Like many Catahoula blends, the name comes with a dog story.

As a puppy, Raven was found in a cornfield in Nebraska beneath a sign that read “Raven Feed.” She would eventually become Tim's childhood dog—and years later, the inspiration for the name of our next house espresso.
